DL-Malic Acid 99% Functions & Applications

DL-malic acid is an acidulant used to develop a smooth, persistent sour profile in foods and beverages when the supplied grade is suitable. This listing specifies 99%, which concerns raw-material assay rather than a recommended concentration in a finished product. Relevant development work includes balancing fruit flavours with sugar or high-intensity sweeteners in drinks and adjusting the tart profile of confectionery. The DL designation should be retained when comparing specifications rather than replaced with an assumption of naturally occurring L-malic acid. Particle size also matters for incorporation into a dry or liquid system. Assess the actual assay basis, dissolution and sensory balance before selecting additions for the intended recipe.
