L-Cysteine Functions & Applications

L-Cysteine is a sulfur containing amino acid with reducing functionality relevant to selected food processing applications. Technical producer literature describes dough conditioning through reduction of disulfide links in the gluten network, a formulation approach used when a dough needs controlled relaxation. It also identifies cysteine as a reactant in the development of savory reaction flavors. These uses require an appropriate food grade and a process specific assessment rather than a general nutritional or antioxidant claim. The free amino acid should be distinguished from cysteine hydrochloride preparations and from cystine, its oxidized dimer. Confirm the supplied form before comparing amounts with a published processing example. No particular dough response, flavor profile or animal free manufacturing route is established by this listing.
