Maltodextrin Functions & Applications

Maltodextrin adds solids and carries other ingredients in powdered foods, beverage blends and flavour systems. It can supply bulk without the sweetness associated with an equivalent amount of conventional sugar, while helping establish mouthfeel in soups, sauces and drinks. Spray-drying applications use it as a carrier for ingredients that need conversion into a manageable dry format. Its dextrose equivalent reflects the extent of starch hydrolysis and influences grade selection, so maltodextrins with different values should not be treated as identical. Commercial instantised versions also differ in dispersing behaviour. Match the actual grade to the intended drying, blending or reconstitution process, with flavour balance, solution texture and powder handling assessed in the final mixture.
