Ragi Malt Powder Functions & Applications

Ragi malt powder is associated with flour made from malted finger millet, a cereal processed through germination, drying and milling. Malted ragi has documented use in milk based beverage formulations and cereal foods. Its formulation interest includes the changes that malting produces in the grain, particularly the development of enzymes that can alter starch behavior during processing. The actual contribution depends on how the malt was germinated and heated; a powder with inactivated enzymes should not be specified as an enzyme rich ingredient without supporting data. When developing a cereal blend or malt drink, assess the supplied powder's composition, taste and behavior during cooking. This listing does not establish suitability for infant, medical or other specially regulated foods.
