Tocopherol (Vitamin E) Functions & Applications

Tocopherol is used to help protect oxidation-sensitive oils and fats within formulated products. By interrupting lipid oxidation, it can support the stability of an oil phase that would otherwise develop unwanted odour or colour changes during storage. The useful level depends on the lipid mixture, processing exposure and the other stabilizing measures in the formulation. Tocopherol itself also requires protection from excessive heat, light and oxygen. Commercial vitamin E ingredients vary in isomer profile, concentration and carrier, making the supplied composition important for reproducible results. Free tocopherol should be distinguished from tocopheryl acetate when selecting a bulk-formula antioxidant. Its antioxidant function does not establish a complete antimicrobial preservation system for a water-containing product.
