Potassium Citrate Functions & Applications

Potassium citrate is used as a buffering, sequestering and emulsifying ingredient in appropriately specified food, beverage and industrial systems. Manufacturer guidance describes tripotassium citrate as an alternative to trisodium citrate when reducing sodium contribution is part of the formulation brief. Its function is therefore more specific than adding potassium alone: citrate chemistry can also influence pH control and metal-ion interactions. The exact salt and hydration state must be identified before calculating its composition. A tripotassium citrate monohydrate reference does not establish the identity of every shortened potassium-citrate listing. Selection should consider the required buffer behaviour, taste or process compatibility, alongside the documented quality grade for the intended application.
